Synopsis

A fascinating handbook that uncovers the hidden nutritional power of food scraps, offering a groundbreaking, science-backed guide to transforming waste into health, vitality, and planetary wellbeing

Laura Campbell presents a revolutionary new model that will change the way we understand food. Planetable reveals that the food scraps, odds, and ends, that are mindlessly thrown away as we cook, or at the end of a meal, are vital sources of nutrients: the food we dispense of can be an essential tool in helping to control blood sugar, boost our metabolism, prevent inflammation, and assist with ageing.

Rich with the latest scientific research, yet presented in an easy and accessible prose, Planetable systematically tackles each food group, offering a plethora of practical advice on how we can better use our food - as medicine, for our brains, in our relationship with nature, as well as much more.

Campbell complements each section with many imaginative and innovative recipes, exploring how to realistically utilise this knowledge in everyday cooking to create delicious cuisine from nutritious treasures.

Planetable goes one step further, showing how reevaluating our relationship with food and food waste can not only change our own health, but also has the potential to create positive change for the wellbeing of the planet, on a much larger scale.

As discussions about diet culture and food fads flood the media, Planetable is a refreshingly honest and simple approach to food, showing how we can better utilise the food that we are already eating to improve our wellbeing and overall happiness.
